Healthy rhubarb flapjacks

Good evening all!

I’ve had a lovely day at home today with Lil making, tortillas, our lovely turkey chilli for dinner and we’ve also made flapjack.
I have made this recipe once before for family at easter and they went down a treat despite some dubious faces when I said they didn’t contain any sugar, syrup or butter!
I posted the pic of them through instagram and as promised, here is the recipe.
Start by making an orange and rhubarb compote. I used 2 oranges, 3 sticks of rhubarb and an inch of freshly grated ginger. Put in a pan and simply let it reduce down.
Pre warm your oven gas mark 5.
Whilst that’s working it’s magic, mix all other ingredients in a bowl,
150g oats
100g dates, blitzed in a blender with a splash of water.
50g pumpkin seeds
50g sunflower seeds
2 mashed bananas
3 tbsps of honey
Approx 10 almonds chopped up

Place half the mixture in a greased tin lined with grease proof paper. Then layer on some of the compote and finally place the rest of the mixture on top like a flapjack sandwich.
Bake in the oven for approx 45 mins.
Yummy yum! A seriously good, guilt free treat to accompany a cuppa!!

I have some compote left over so I’m going to add that to my bircher for breakfast!

You could add all sorts to this flapjack, play with the flavours! I will be and will keep you posted!
